Tortilla (Spanish Omelette) - A dish originating from the kitchens of poor Spanish people, the ever popular and tasty tortilla is a favourite all over the world. It would be a poor man indeed who could not find the necessary ingredients in his food cupboard, and all that is needed is a few eggs, an onion and a couple of potatoes.

Easy to make, the tortilla is cooked gently over a low heat to ensure an even texture throughout. Unlike the better known French omelette, the tortilla does not have to be eaten immediately and in fact improves if left to rest for a few minutes after cooking.

The tortilla (Spanish omelette) will also keep for a few days if stored in the fridge and is lovely eaten cold with salad. The tortilla is a Spanish traditional dish and is commonly served as part of a tapas snack in any of the thousands of tapas bars that can be found throughout Spain, it can be eaten hot or cold and is delicious either way.

The tortilla can be made in a normal frying pan or in a special tortilla pan, which allows you to turn the tortilla easily in order to cook the other side. If cooked in a traditional frying pan the other side can be easily cooked by placing under a grill.
